Corn Cooking Crazy

I love fresh vegetables in the summer. Have I mentioned that already? Last night, we had fried squash and corn on the cob for supper. Who needs meat?

My mother in law taught us a simple and quick way to cook fresh corn on the cob. You place the ears in the microwave (I suggest no more than two at a time) left completely in their husks. Run the microwave for 2 minutes per ear of corn.

Remove the corn, and shuck. The husks and silks will come off very easily after microwaving.

If you try this, let me know. We love it this way, and have been enjoying LOTS of fresh corn!

    This sounds delicious! As sick as I've been, I think the vitamins from these veggies would do me good. Better not be home this weekend, or you will have unexpected company . . . oops! since I gave you a hint, it won't be a surprise :)
